On my first visit to CDMX I couldn’t get a reservation at Rosetta. It was near the top of my list of places to try on this visit, and I made a reservation as soon as I knew I’d be in town.
The food did not disappoint. The sea bass, encrusted in salt and baked came out amazingly tender and delicious. The white mole was nicely balanced by the bite in the fermented carrots, and the fagottini had a nice sweetness and the pasta purse had a nice texture.
I couldn’t help but get dessert afterwards, a large brittle leaf covering a delectable white bean cacao cream.
